Despite Years of Berating, Americans Still Not Consuming Vegetables (via-NYT)

This month, the U.S. Centers for Disease Control and Prevention released the results of a national study on fruit and vegetable consumption, which found that only 26% of American adults eat vegetables three or more times a day (not including french fries). This is less than half of what public health officials had hoped for. In fact, this statistic has barely budged since the year 2000. Furthermore, the 25th annual edition of "Eating Patterns in America," released this week, shows that only 23% of meals prepared in the U.S. included a vegetable (again, french fries do not count), and the number of dinners prepared at home that included a salad was 17% (in 1994 it was 22%). So what is it about fresh vegetables that turns us off? Is it the taste? The time that it takes to prepare them? The price? All of the above? I think we all know that vegetables contain essential nutrients that are good for our health, so why aren't Americans consuming more? [via New York Times]
